The dishes from Kerala include those made from the region’s staple of fish, as well as chicken items and a wide range of vegetarian dishes and specialty breads such as poratha. The North Indian style cuisine mainly comprises popular items such as Talis and Tandoori oven-fired dishes, with a special emphasis on building up a repertoire of the spiced sauces that form the basis of the cuisine and can be utilised in many different contexts. Learn about different spices and their particular properties; making of a specific mix, known as the masala, and those dishes that utilise it.
